We were partly lured to Einsteins because of a $5 off gift card we had. A family member had given us this card as a gift.
We made our selections and went to the register to pay. We hadn’t noticed, but the gift card had expired last month. The cashier kindly rejected our gift card, we paid, and ate our bagels.

An astounding number of expired gift certificates or gift cards are probably lying around in the desk drawers of self-denying moms. But common though this problem must be, only some states have laws that deal with it. Luckily, federal law addresses this issue.
Thanks to the federal Credit CARD Act of 2009, gift certificates and store gift cards can't expire for five years. However, issuers can still charge an "inactivity fee" if the card has not been used within twelve months. (15 U.S.C. § 1693l–1).
Again, some states have passed laws that regulate gift certificates and gift cards. In California, for example, it's against the law for store gift certificates and gift cards to have an expiration date or dormancy fees (except under certain circumstances), and if the balance on the card is less than $10, you can redeem it for cash. (Cal. Civil Code § 1749.5).
To find out if your state has any laws that cover gift cards or certificates, check out the National Conference of State Legislature's chart covering state statutes related to gift certificates and gift cards . A local consumer protection lawyer can also tell you about applicable laws in your state.

I have enough points to redeem a $10 Walmart gift card code. I read that redeemed gift cards expire after 3 months possibly. Is it the code itself that expires? Is it the same deal for other gift cards?

I could understand when a store goes out of business (case in point: Linen's N Things), they do not have to take a gift card anymore but an established store like Macy's? Well, it turns out by flipping the back of the card over they sure have a 2 year shelf life and you've got to use it in that time frame. Now there's a gotcha if I ever heard of one.
I was at Macy's on Saturday for their One Day Sale looking to buy a blender and they had this Oster on sale for $48 with the food processor attachment. Perfect! I have a Macy's gift card my previous bank in Louisiana gave me when I closed my account from their frequent credit/debit card user program. So I took it out and swiped it.
And then it said it was expired.
Since when do gift cards expire?

I called Macy's Customer Service line directly from the store and they fortunately re-established my account and the 56 bucks I still had in it. Took the blender back and even the guy taking my order had no clue that Macy's gift cards expire. Who did? So now I have four bucks left on my account so maybe I'll just get one of the closeout candy bars and fast.
Unfair gift voucher expiration periods and hidden fees generate millions of dollars of passive revenue for large corporations at the cost and prejudice to Australian consumers.
In NSW there is also now a ban on charging any post-purchase fees when redeeming a gift card which would reduce its value, including account-keeping fees and activation fees.
Tom Godfrey, Head of Media at consumer advocacy group, CHOICE, welcomed the reforms:
These reforms have been a long time coming and are a big win for NSW consumers … we hope it signals the beginning of the end of retailers cashing in at our expense”
NSW is currently the only state in Australia to introduce such reforms, which align with countries such as the United States, Canada and the United Kingdom.
Unfortunately, your cash reverts back to the store.
The retailer profits without providing any goods or services for which the voucher was purchased.
Generally, businesses are not required to honour gift cards after the expiration date elapses.
You do, however, have a few options:
Option 1
Ask to speak to the Store Manager.
Calmly and courteously discuss an arrangement that involves redeeming the gift card by a specific date. This might be on the date that you are at the store or at a later date. Managers are often flexible and may try to accommodate honouring your gift card not only as a sign of good faith but also to retain your business in the future.
Option 2
If Option 1 is unsuccessful, you may wish to make a complaint to the Head Office of that specific retailer.
You can do this by phone or in writing.
Retain a copy of your correspondence or, if you are making a complaint by phone, request a reference number for your call. You can use this information as evidence if you choose to take things further.
Option 3
Make a complaint to your State or Territory Consumer Protection Agency such as Consumer Affairs or Fair Trading.
Option 4
Contact the Australian Competition and Consumer Commission (ACCC). The ACCC is the competition and consumer regulator and deals with a range of consumer complaints.
Option 5
Depending on the nature of your complaint, if it remains unresolved, you may be entitled to take your complaint to your State or Territory Small Claims Tribunal.
Option 6
If you have explored all the above options, you may wish to consider seeking independent legal advice about what options are available to suit your circumstances.
While the recent legislative changes to gift voucher expiration periods are a welcome protection for NSW based consumers, it is about time that other Australian jurisdictions make comparable reforms.
Unfair gift voucher expiration periods and hidden fees generate millions of dollars of passive revenue for large corporations at the cost and prejudice to Australian consumers.
These cards are a gift horse for retailers who can take advantage of inflation, changes in value and low redemption rates. The least these companies can do is offer a product that’s fair, including a minimum expiry with no sneaky fees, says Tom Godfrey.
